An old fashioned Dutch recipe made modern again by Iet Fuijkschot, editor of Holland Focus.

Ingredients

250g butter
300g caster sugar
1 tsp vanilla essence
4 egg yolks
½ bottle advocaat
1 packet sponge finger biscuits
Cream and shaved chocolate, to decorate

Preparation

Cream the butter, caster sugar and vanilla essence in a mixer for 5 minutes or until light and fluffy. Push the mixture down the sides of the bowl. Add the egg yolks, one at a time, then add the advocaat.

Arrange the sponge fingers, sugared side down, on the bottom of a spring-form cake tin.

Spread the advocaat mixture over the sponge fingers. Place in the fridge for at least 4 hours.

Decorate the cake with whipped cream and chocolate to serve.
