Sinigang is one of the Philippines most famed dishes and loved the country over for its subtle sour flavour. Sour ingredients, such as green mangoes, tamarind, guava and vinegar, are abundant in the Philippines. This abundance is likely the cause of Filipinos penchant for sour dishes.

This recipe was derived from Ruby’s childhood in the Philippines, where she observed it being prepared on a near daily basis.

Ingredients

1 kg pork ribs, trimmed of fat
1 medium brown onion, diced
40g packet tamarind soup base (available from Asian grocers)
Handful of green beans, trimmed
1 bunch of bok choy or choy sum
Long green chillis, sliced
Fish sauce, salt and pepper, to taste

Preparation

Chop pork ribs into pieces, place in a large saucepan and cover generously with water. Bring to the boil, making sure to remove the scum that floats to the top during the early stages of boiling. Add onion, season with salt, then simmer for 45 minutes to 1 hour until tender.

Stir in one-third or half of the packet of the tamarind soup base.

Add the green beans, cook for 5 minutes, then add the bok choy and chillies.

Season to taste with salt, fish sauce and black pepper. Aim to achieve a good balance of sourness, saltiness and meat flavour.

Serve with steamed rice.
