Join us for Around the Kitchen Table with Holland Focus editor Iet Fuijkschot, as he shares an old Dutch recipe for broeder (or brother). This special pancake is meant to be shared by two people.
Ingredients
250g plain flour (or 125g plain flour and 125g buckwheat flour)15g fresh yeast or two sachets of dried yeast
200ml lukewarm milk
1 egg
Oil (olive oil or vegetable oil)
100g diced bacon (optional)
200g sultanas (or 100g sultanas and 100g dried currants)
1 peeled and diced apple
1 tsp cinnamon
Sauce
200ml golden syrup
100g butter
Preparation
Sieve the flour into a bowl. If using dried yeast, add this to the flour. If using fresh yeast, mix it in the lukewarm milk. Beat the egg lightly and place in the centre of the flour, pour the milk over it and slowly mix it in the flour until all the milk is absorbed. Beat the batter until it forms a ball. Let it rise for at least 1½ hour.Heat the oil in a frypan. Add the bacon and fry until brown. Add the bacon, sultanas, apple and cinnamon.
Heat 1 tablespoon of oil in a Dutch oven (or large frying pan).
Place the flat cake in the hot pan until the bottom starts browning. Bake on low heat for about an hour with the lid on the pan. Remove the broeder from the pan. Add 1 tablespoon of oil to the pan and brown the other side of the broeder and leave for another 10 minutes.
To make the sauce, heat the butter and golden syrup in a small saucepan, stirring well.
Drizzle sauce over the broeder to serve.

Roasting/toasting spices
