Bokkenpootje is a typical Dutch biscuit made up of two almond meringues dipped in chocolate. Homemade ones are so much nicer and tastier, says the editor of Holland Focus, Iet Fuijkschot.

Ingredients

5 egg whites
200g caster sugar
1 pinch salt
175g almond meal
50g plain flour
25g corn flour
Shaved almonds

Creme au beurre
1.25 dl milk
1 tsp vanilla essence
25g sugar
15g flour
1 tsp instant coffee
3 egg yolks
125g butter
200g dark chocolate

Preparation

Preheat oven to 180°C.

Beat the egg whites until firm. Gradually add the sugar and salt.

In a bowl, combine the almond meal, plain flour, corn flour. Fold into the egg mixture and spoon thick batter in a piping bag. Like a tray with baking paper.

Pipe biscuits of about 6cm on the tray. Sprinkle with shaved almonds. Bake, in preheated oven, for about 20 minutes. Remove from oven and cool on a wire rack.

To make the creme au beurre, in a small saucepan, bring the milk, vanilla essence and sugar to the boil. Mix flour, instant coffee and egg yolks with a little cool milk. Mix a little of the boiling milk through the flour mixture. Gradually add the remaining milk, stirring constantly. Reheat for about 4 minutes until the mixture thickens. Set aside to cool.

Cream the butter and stir through the mixture while still luke warm. Place in fridge until firm. Cover the flat side of the biscuit with creme au beurre and press another one on top.

Melt dark chocolate using a bain marie or microwave. Dip both sides of the biscuits in the chocolate.
