Belgian pastry chef Didier Lanoote from Taste of Belgium in Seaforth, NSW, joins our kitchen table to talk about how Belgians make world-renowned chocolate pralines. Didier's honey ganache pralines are delicious. A note of caution – don’t make too many!

Ingredients

300ml fresh cream
50g honey
1kg pure chocolate couverture, broken into small pieces
400g milk chocolate couverture, broken into small pieces

Preparation

In a saucepan, bring the cream and honey to the boil, stirring often. Add the couverture chocolate and stir until the chocolate melts and a smooth mixture forms. Remove from heat and set aside to cool slightly.

Fill 2 plastic moulds with the chocolate mixture. Let the chocolate set in the moulds. (It will shrink as it hardens).

Turn the pralines out onto a clean surface. Decorate with sugared flowers or nuts.
