Danny Sánchez, of Mamasita in Melbourne, shares a recipe for chipotle brasied boat.
After years of celebrating fast cooking, chefs have started to return to the traditions of the old way of cooking, over low heat for many hours. Almost no oil is used and the flavours come out to create fabulous dishes thanks to this this slow-cooking process. Braised goat is one of these Latin American dishes that takes hours to cook but it is very simple to prepare.
Ingredients
1 pasilla chilli from Oaxaca, cleaned, deseeded2 black pasilla chillies, cleaned, deseeded
Olive oil
2kg goat, cut into large pieces
1 carrot
10g dried mushrooms
1 bunch thyme
4 tsp cumin
150g chipotle (canned)
Chicken stock, to cover
Sweet corn puree, to serve
Preparation
Soak the chillies in water for at least 8 hours to hydrate. Drain.Heat the oil in a saucepan over very high heat. Seal the meat until golden. Remove the meat from the pan.
In the same pan, add the chillies, carrot, dried mushrooms, thyme, cumin and chipotle. Cook, stirring occasionally, for 15 minutes or until a thick paste forms.
Return the meat to the pan, cover with chicken stock, and cook for a further 10 minutes.
Pour all the ingredients into a tray and cook in the oven at 120°C for about 4 hours or until the meat is tender and falls off the bone. Carefully remove the meat from the tray.
Transfer the remaining tray ingredients and juices to the jug of a blender. Pulse to make a sauce. Place in a saucepan over medium heat. Set aside until needed.
Divide the sweet corn puree among serving plates. Top with the goat. Drizzle over the sauce.

Rare roast beef
Using a meat thermometer helps to determine precisely when the beef is cooked to rare. Simply insert the thermometer into the centre of the thickest part of the beef (avoiding the bone, fat and gristle), it will be cooked to rare when it is 50°C, medium-rare will be 55°C, medium is a little over 60°C.
