Coconut milk and ginger add a flavoursome twist to this aromatic chicken stew called ginataang manok. In this podcast, Raquel San Juan of La Mesa restaurant in Sydney shares her recipe.

Ingredients

1 tbsp cooking oil
2 cloves of garlic, crushed
1 small onion, chopped
2 tbsp chopped ginger
1kg chicken thigh fillets, cut into 5 cm pieces
½ tsp salt
½ tsp cracked black pepper
1 x 330ml can of coconut cream
Chopped chillies, to taste

Preparation

Heat the oil in a saucepan. Add the garlic, onion and ginger, and cook until the onion softens. Add the chicken and cook until chicken meat turns white.

Add 1 cup of water and the salt and pepper. Stir well. Cook for a further 30 minutes or until the chicken is tender.

Pour in the coconut cream. Continue cooking until the sauce is thick and creamy. Add the chilli. Remove from heat.

Serve with steaming hot boiled rice.
