Belgian pastry chef Didier Lanoote from Taste of Belgium in Seaforth joins our kitchen table to talk about our daily bread, and how easy it is to create tasty bread rolls to take on a picnic.

Ingredients

385g plain flour
140g wholemeal flour
10g salt
15g fresh yeast
10g honey
310ml lukewarm water (about 21°C)
1g bread proofer (optional)

Preparation

Combine the flours and salt in a bowl. Add the yeast, honey, water and bread proofer (if using), and mix to form an elastic dough. Cover with a damp tea towel and set aside for 1 hour to rise.

Preheat oven to 220°C.

Use a knife to divide the dough into equal 40g portions. Cover and set aside to rest for a further 15 minutes. Roll each portion into an oval and dust with flour.

Place on a baking tray lined with baking paper. Bake in preheated oven for 10-15 minutes. Place on a wire rack to cool slightly.

Fill with ham, cheese, mustard and mixed greens, and season with salt and pepper. Or, fill with grilled chicken breast, mayonnaise, alfalfa and vine-ripened tomatoes.
