Pasta and beans alla sutrina recipe

Ingredients

800g flour
Tepid water
500g beans
1 celery stick
2 strips pork rind, cut into strips
¼ onion
200g pancetta, cubed
Red chillies
250g tinned tomatoes
Extra virgin olive oil

Preparation

Place the flour in a bowl and make a well in the centre. Add the tepid water and knead until a smooth dough forms. Roll out the dough to form a worm-like cylinder. Cut into small pieces to form the gnocchetti.

Place the beans in a container. Cover with water and leave to soak overnight.

The next day, drain the beans and place in a saucepan. Cover with clean water. Add the celery and bring to the boil.

In another saucepan, add the pork rind, cover with water and boil for 45 minutes.

Heat the extra virgin olive oil in a frypan. Add the onion, pancetta and chilli and cook, stirring, until the onion softens. Stir in the tomatoes and beans. Serve.
