Born in France near Versailles, Marc Laucher decided to move to Australia in 1986. He first opened a waffle shop in Sydney and then moved to Melbourne. His friendly cafe Waffle On offers wonderful Liege Belgian waffles, as well as classic French baguette sandwiches made fresh to order.

Ingredients

1 (1/4 ounce) package yeast
1/3 cup lukewarm water
1/4 cup lukewarm whole milk
1 1/2 tbsp granulated sugar
1/8 tsp salt
2 cups flour
3 eggs
1 cup butter, softened
1 cup pearl sugar
1 tsp vanilla

Preparation

In a bowl, combine the yeast, water, milk, sugar, vanilla and salt. Set aside for 15 minutes to rest.

Place the flour in a large bowl. Make a well in the centre and pour in the yeast mixture. Knead until a soft dough forms. Add the eggs, one at a time, kneading continuously. Gradually add the butter, 2 tablespoons at a time, mixing well. Set aside the dough to rest in bowl until double in size.

Gently mix in the pearl sugar. Set aside to rest for a further 15 minutes.

Heat a waffle iron. When hot, grease with butter and pour in 3 tablespoons of dough per waffle. Cook for 3-5 minutes or until the waffles are light brown.

Serve warm or at room temperature.

Marc is a reliable and universally friendly coffee maker who allowed my friends and I to sit a chat with him while he made the best waffles in Australia. He knows what hospitality and good food is about.
