Karmen Tedesco shares her version of a traditional Maltese meat pie. Different villages in Malta use many different ingredients to fill these crunchy wholesome pies. This is a main dish, which is very filling due to the chunks of meat.
Ingredients
1 tbsp olive oil400g diced beef or pork
300g chopped onions
4 bay leaves
1 tsp mixed spice
250ml red wine
100g carrots, chopped
400g peas (fresh or frozen)
100g tomatoes, peeled, chopped
400g short crust pastry
Preparation
Heat the olive oil in a frypan. Add the beef and cook until brown. Remove from pan. Add the onions, bay leaves and mixed spice. Fry, stirring occasionally, until the onions soften. Reduce heat to low and return the beef to the pan. Cover and simmer for 20 minutes.Preheat oven to 180°C.
Add the red wine, carrots, peas and tomatoes to the pan. Cover and simmer for a further 15 minutes. Remove from heat and set aside to cool.
Take two thirds of pastry and roll in a 23cm pie dish. Spoon in the beef mixture and cover with the remaining pastry.
Press edges down firmly to seal. Cook the pie in preheated oven for 50 minutes or until the pastry is golden brown. Remove the pie for the oven to rest for a few minutes. Cut into slices to serve.
