Pasta or noodle making has its origins in Asia. It then travelled to Rome and Greece.
The word pasta comes from Latin word pasta "dough, pastry cake", itself the latinisation of the Greek παστά (pasta) "barley porridge", in turn from παστός (pastos), "sprinkled with salt, salted". Many people will be surprised to know that pasta is not really uniquely Italian and that Greeks have been making pasta since ancient times. Lasagna was made in Ancient Greece and lasagne actually has it origins from Ancient Greece.
This pasta dish incorporates the classic ladolemono dressing usually used in marinades and dressings.
Ingredients
12 sheets filo pastry, cut into four strips6 tbsp extra virgin olive oil, for frying
500g chicken thigh fillets, thinly sliced
2 small red onions, thinly sliced
¾ cup parsley, finely chopped
200g mushrooms, sliced
1 tsp honey
1 egg, beaten
200g Greek feta, crumbled
100g Greek kasseri cheese, grated
Salt and pepper, to taste
Extra olive oil, for brushing
2 tbsp parsley, finely chopped, to garnish
Preparation
In a medium-sized saucepan place water and sea salt and bring to a boil over high heat.Cook the pasta according to packet instructions, until there is a bite to the pasta.
Drain the pasta well and transfer to a bowl.
Add the remaining ingredients, except for the parsley and mix well.
Place the pasta on two plates and sprinkle some parsley on top. Serve hot.
