Rice with duck is one of the most traditional Peruvian dishes. A young Peruvian woman moved to Australia less than a year ago and brought all her experience and energy to Sydney. Her name is Norma Castillo and, here, she reveals how to prepare rice with duck.

Ingredients

4 large pieces of duck
½ cup dark beer
½ cup vegetable oil
1 onion
2 cloves of garlic
3 sprigs of coriander, chopped
1 red chilli, chopped
1.5 cups duck broth
1.5 cups rice
1 carrot in small cubes
¼ cup peas
1 capsicum, half chopped and half cut into strips
1 whole shredded yellow aji
1/4 tbsp ground yellow aji

Preparation

Place the dark beer and salt in a medium bowl. Add the duck and set aside to marinate for 30 minutes. Drain and set aside.

Heat the oil in a frying pan. When the oil is hot, add the marinated duck and fry for 10-15 minutes.

In a bowl, combine the onion, garlic, coriander and chilli. Add this mixture to the pan, stirring, until golden. Remove from pan.

Return the duck to the pan and cover with stock. Cook until the duck is ready. Remove the duck.

Add the rice, carrot and peas to the pot. Cook for about 25 minutes, until the rice is cooked.

To serve, divide the rice among dishes, top with a piece of duck and serve with the tomato, garlic, coriander and chilli salad.

Decorate with the capsicum and aji.
