Honey roast pork with stir-fried noodles recipe

Whether it’s served at a dinner-party or as an everyday meal, this pork dish is an absolute winner.
Ingredients
2 tbsp soy sauce2 tbsp honey
1/2 tsp sesame oil
500 g pork fillet
375 g dried rice noodles
1 bunch Chinese broccoli
2 tbsp peanut oil
1 clove garlic, crushed
1 small red chilli, de-seeded and diced
2–3 tsp grated ginger
4 spring onions, sliced
100 g (3/4 cup) roasted cashews
Chicken stock or water
Soy sauce
Preparation
Preheat oven to 180C.Place the 2 tbsp soy sauce, honey and sesame oil in a small saucepan. Cook over a medium heat until reduced to a thick syrup.
Place the pork in a baking dish. Brush honey mixture over and cook in the preheated oven for 15–20 minutes, by which stage it should be cooked to medium.
Put the kettle on to boil. Pour boiling water over the noodles and set them aside.
Wash the broccoli well. Remove the tough outer leaves and slice the stems and leaves on an angle into 2 cm slices.
Place a wok over a high heat. Add peanut oil, then the garlic, chilli, ginger and spring onions. Cook for 1–2 minutes, stirring often to avoid burning, until fragrant. Add the sliced Chinese broccoli and cashews. Cook briefly, then add a splash of stock or water. Cover with a lid and cook for 2 minutes.
Drain the noodles and add them to the wok, along with more stock or water if the stir-fry is looking a little dry. Toss while cooking for 2–3 minutes, until well combined. Season with soy sauce to taste.
Slice the roast pork. Place the stir-fried noodles on a serving platter and arrange the pork over the top. Serve immediately.
