Margarita Domínguez comes from the north of Mexico, where meat barbecued the Mexican way reigns. This is also the favourite dish of the current President of Mexico, Felipe Calderón.

The sauce and guacamole will serve two.

Ingredients

1 skirt steak (about 200-250g)
1 cup baked beans
2-3 flour tortillas
1 bottle of beer

Flag sauce (salsa bandera)
1 tomato, chopped
1 onion, chopped
½ bunch of coriander, chopped
1 green chilli, chopped
1 jalapeño chilli, chopped
Juice of ½ lemon

Guacamole sauce
4 avocados
1 onion, chopped
1 tomato, chopped
¾ cup milk
Juice of ½ lime

Preparation

To prepare the flag sauce (salsa bandera) combine the ingredients in a small bowl. Season with lemon juice and salt.

To prepare the guacamole, mash the avocados (reserving one avocado seed) in a bowl. Add the onion and tomato. Add the milk and lime juice and mix well. Add the reserved avocado seed.

Season the meat with salt and pepper. Pour beer over the flesh. Cook the meat over a fire (using coals) for 15-20 minutes.

Slice the meat, place in a tortilla and roll to enclose the filling.

Serve with the guacamole and flag sauce.
