How to enjoy chilli pork, Korean style: First, put a piece of lettuce on your palm. Next, place a tablespoon of warm steamed rice on the lettuce, then top with chilli pork. For extra kick, add a bit of sauce (ssamjang or gochujang) on top of the rice. Finally, bundle up the lettuce and enjoy.
Ingredients
500g pork belly or pork neck, slicedRice, to serve
Kimchi, to serve
Marinade
2-3 cloves garlic, finely minced
1 tsp ginger, finely minced
2 green onions, chopped
2-3 tbsp kochujang (Korean chilli paste)
½ tbsp kochugaru (Korean chilli powder)
2 tbsp sugar
2 tbsp cooking sake
1 tbsp mirin
2 tbsp sesame oil
½ tsp ground black pepper
Preparation
Combine the marinade ingredients in a bowl. Add the pork and marinate in the fridge for several hours or overnight.Pan-fry the pork for 10 minutes, or grill on high for 15 minutes or until cooked. Turn the meat over a few times during cooking. Serve with rice and kimchi.
Note: Pork neck is equally delicious in this recipe. Sliced pork belly or pork neck is sold in Korean butchers and supermarkets.
