Chef Hassan M’Souli gets inspired from the Mediterranean for this summer salad combining classic flavours of dates, figs and goat’s cheese.

Ingredients

Salad
100g mixed baby salad leaves
100g witlof leaves
1 cup fresh dates, halved, pitted
3 green apples, cored, thinly sliced
4 fresh figs, quartered
½ cup chopped walnuts
200g soft goat’s cheese

Dressing
2 tbsp raisins
½ cup honey
½ cup apple cider
1 strip lemon rind
2 tbsp lemon juice
½ cup extra virgin olive oil

Preparation

Mix the baby salad leaves, witlof, dates and apple slices together and place in a large shallow bowl.

Arrange the fig pieces around the edges and sprinkle the walnuts on top of the salad. Roughly crumble the goat’s cheese over, mainly in the middle.

For the dressing, place all the ingredients, except the lemon juice and oil, in a food processor or blender. While blending, pour in the lemon juice and olive oil, teaspoon by teaspoon, until smooth and combined.

Drizzle the dressing over the salad and serve. Sprinkle with grinded rock salt to taste.
