Sydney chef Geert Elzinga from Essen restaurant shows us how to prepare herring in beetroot.

Ingredients

1 jar pickled herring (available from supermarkets and delis)
400g cooked beetroot
100g sweet apple
150g cooked potato
50g gherkins
20g red wine vinegar
40g cotton seed oil

Preparation

Blend all the ingredients (except the herring) to a smooth puree.

Take the herring out of the brine and dry between pieces of paper cloth.

Empty the glass jar (the one the herring came in), add the herring pieces back into the jar and add the beetroot puree. Marinate for 24 hours.

Serve with crusty sourdough bread.
