Vorí vorí is the favourite dish of the president of Paraguay, Fernando Lugo. It is a thick soup made with little balls of cheese and cornflour. It is very rich in calories and one of the most popular in Paraguayan gastronomy.

Ingredients

1 free range/corn-fed chicken
1 capsicum
1 tomato
3 garlic cloves
1 onion
2 tsp salt (or to taste)
Parsley, to taste
Fresh oregano, to taste
3L boiling water

Vori vori
1 cup cornflour
½ cup semolina
100g ricotta
1 egg
1 tsp oregano
1 slice grated mozzarella

Preparation

To prepare the soup, chop and triturate all the ingredients together in a meat mixer, except for the chicken.

Cut the chicken into 4 or 5 pieces.

Place the water in a pot, add the pieces of chicken and vegetables and cook for about 1 hour.

To make the vori vori, mix the cornflour and semolina in a bowl.

Add the ricotta, egg, oregano and grated cheese and combine the ingredients with your hands.

Using a spoon, take the fat from the surface of the soup and add it to the cornflour mix.

Combine well and make little balls, then place the balls inside the boiling broth.

Cook for 5 - 7 minutes and top with the oregano.
