Pork is a favourite meat for Poles and they like to experiment with it. And that is what Piotr did, when he found the recipe for pork medallions in mustard sauce in an old magazine. He changed it to his liking and the result was beautiful, tender meat in a creamy sauce.

Ingredients

1kg pork fillets
Salt and pepper
Butter and oil, for frying
200ml white wine
1 cup double cream
1 tbsp wholegrain mustard
2-4 gherkins, chopped
Fresh parsley, chopped

Preparation

Cut the pork fillets in slices, flatten them and season with salt and pepper.

Fry the pork in butter and oil for 8-10 minutes until cooked. Remove and set aside.

Deglaze a frypan with the wine, add the cream and mustard and heat gently, until melted.

Add the gherkins. Return the pork to the pan, and simmer until cooked through. Season to taste and add the parsley.

Serve with gnocchi, green beans and broccoli.
