These mini doughnuts are a great accompaniment for your morning coffee. Bomboloni are traditional sweets widely available all over Italy, in different versions and with different fillings. Jade Amenta from Melbourne's Solarino restaurant says her nonna used to prepare them with a sultana and lemon filling.

Ingredients

185g flour
10g sugar
7g fresh yeast
140ml warm milk
2 tbsp melted butter
½ whole egg

Preparation

Dissolve the yeast in the warm milk. Add the rest of the ingredients and mix together.

When everything has been mixed together, cover with glad wrap and leave the dough to rest, until it doubles in size.

Roll the dough into small 20g balls. Let them rest again, allowing them to rise in size, up to a stage in which they will appear fluffy and light.

Slowly deep-fry the doughnuts. Fill with your favourite filling.
