Stuffed crabs recipe

Chef Ana Patricia Barreda is from Tampico, Mexico, whose emblem is the crab. In fact, the local soccer team are called "brave crab," the city's port is called "crab port" and people born in Tampico are known as "crabs." So naturally, the most popular dish in Tampico couldn't be anything but crab, and here's one of the locals favourite dishes, stuffed crab.

Ingredients

6 mud crabs or blue swimmer crabs
1 onion
2 bay leaves
1 carrot
2 stalks celery
2 sprigs parsley
Salt, to taste

Filling

1 tbsp vegetable oil
2 tbsp butter
1 large onion, finely chopped
4 large garlic cloves, finely chopped
1 green capsicum
4 tomatoes, seeded, chopped
1 seedless green chilli, jalapeno or serrano
Pulp of 6 crabs
Parsley, chopped
Salt and pepper

Crust

300g breadcrumbs
70g butter, melted
1 garlic clove
Bunch of parsley, chopped
3 eggs, beaten

Preparation

In a large pot, boil some water with the onion, bay leaves, carrot, celery, parsley and a fist of salt.

Add the crabs and boil until they change to a reddish colour and the meat is well cooked.

Remove the crabs and place immediately in ice water to stop the cooking process.

Clean the crabs and remove the flesh from the claws and carapace. Keep the pulp of the crabs on a plate and also keep the shells, ensuring they are well cleaned.

To make the filling, heat the oil and butter in a large skillet or pan.

Add the onion, garlic, capsicum, tomatoes and green chilli and fry to form a sauce.

Add the pulp of the crab and parsley and cook for a few more minutes. Add salt and pepper to taste.

To make the crust, place the breadcrumbs, butter, garlic and parsley in a bowl and combine well.

Fill the shells of the crabs with the filling and brush with beaten egg mixture. Cover the crab with the breadcrumb mixture and flatten slightly with your fingers, until you have a firm consistency.

Bake the crabs in the oven at 180-200°C for 15 minutes, or until golden in colour.

To accompany the crab, serve with freshly sliced lemons, crackers and hot sauce. They can also be served with a lettuce, tomato and onion salad.
