Lentil and vegetable soup recipe

Lentils are widely used in Moroccan cooking, being a base of many soups and tagines. Not only do they provide iron, they give richness to soups when cooked down. This healthy soup is vegetarian, but meat lovers can add chicken or beef. Hassan M’Souli, from Out of Africa restaurant, recommends using a large amount of good fresh garlic in this recipe.
Ingredients
500g (1lb) dried brown lentils½ cup (125ml) extra virgin olive oil
4 white onions, chopped
8 large garlic cloves, finely chopped
3 sticks celery, sliced
4 ripe tomatoes, peeled, chopped
8 cups (2L) water
3 bay leaves
½ cup chopped coriander (cilantro) leaves
Salt and freshly ground black pepper, to taste
1 red chilli, seeded, sliced
3 tbsp tomato paste (tomato concentrate)
2 carrots, diced
Crusty bread, to serve
Preparation
Rinse the lentils in cold water, drain and set aside.In a large, heavy-based saucepan, heat the olive oil over a moderate heat and fry the onions, garlic and celery for about 5 minutes, until soft and golden.
Add the tomatoes, water, bay leaves and coriander (cilantro), and season with salt and pepper to taste.
Bring to the boil, and add the chilli, lentils, tomato paste and carrots. Stir well, reduce the heat and simmer for 30-45 minutes, or until the lentils are tender. Add more water if necessary.
Serve with crusty bread. Store in the refrigerator for up to 1 week.
Note: You can also add broccoli, cauliflower, beans or other vegetables of your choice.
