French peas recipe (petits pois Française)

Tiny petits pois, baby peas, are available frozen and are absolutely delicious cooked this way. Cook the whole bag of peas so there will be plenty for everyone — even seconds.
Ingredients
60g butter2 rashers streaky bacon, rind removed, cut into strips
6 spring onions or eschalots, finely sliced (including some green tops of the spring onions)
½ lettuce or 6–8 outer lettuce leaves, shredded
1kg frozen baby peas
Sprigs of mint
1 tsp sugar
Salt and freshly ground black pepper, to season
2 tbsp water
Preparation
Melt the butter in a large, heavy-based saucepan with a lid and gently fry the bacon and spring onions until soft but not brown. Add the lettuce to the pan and stir over a low heat until it is bright green and juicy. Add the frozen peas to the pan with one or two sprigs of mint and the sugar, and season with salt and pepper to taste.Add the water, cover with a lid and cook over a gentle heat for 15–20 minutes or until the peas are tender. To serve, remove the mint and serve from the pan with the pan juices and lettuce.
