Fattoush recipe (Lebanese summer salad)

Ingredients

1 round Lebanese bread
Vegetable oil for deep-frying
2 Lebanese cucumbers, finely diced (if very fresh, no need to peel)
2 tomatoes, finely diced
½ cup radish, finely diced
½ red capsicum, finely diced
½ green capsicum, finely diced
4 spring onions, finely diced
2 tablespoons mint, finely chopped
½ cup parsley, finely chopped
Dressing juice of 1 lemon
¼ cup extra virgin olive oil
Salt and freshly ground pepper to taste

Preparation

Deep-fry the Lebanese bread.

Drain on absorbent paper and when cool, crumple in your hands until it breaks into small pieces.

Combine the rest of the ingredients with the bread and toss with the dressing.

Serve. If you prefer, you can bake the Lebanese bread in a medium oven for about 10 minutes. This will make the bread nice and crisp.

pomegranate molasses
I think you are referring to the pomegranate syrup (concentrated juice) available at middle eastern shops. It has a dark colour and a tangy flavour and tastes terrific in fattoush. Garlic is optional. Sumac is also a great addition. Tip.. fried lebanese bread freezes very well so it's handy to fry leftover stale lebanese bread, break it up into small pieces and freeze in a container.

sumac is missing from this recipe. thats what makes it a bit darker

On SBS with Maeve O'mara the dressing was a bit different. contained garlic, paprika , lemon juice and other ingredients which made the dressing darker which does not seem to appear in your recipe. Was it like soy sauce or similar because the dressing was darker. I love salads and this looks fantastic. Thank you. Also could you tell me if Shaqli was the dressing or another recipe.
