Chicken congee recipe (delicious rice porridge)

Congee is a delicious low fat traditional Chinese breakfast. It is also delicious late at night.

Ingredients

¾ cup short grain sushi rice
4 cups chicken stock
2 cups water
1 small chicken thigh (80g), cut into thin strips
few drops sesame oil
couple of slices of fresh ginger, shredded
drop of light soy sauce
salt

Preparation

Rinse rice gently. Drain.

Rub sesame oil and some salt into rice with fingers, let stand one hour.

Bring chicken stock and water to boil, add rice. Return to boil, partially cover and simmer until porridge consistency — anytime you like beyond about two hours.

Add raw chicken, ginger, drop of light soy.

Add white pepper and salt to taste.

Simmer for 15 minutes or so, until chicken is cooked.

Vietnamese Congee
Hi Shane I am half Vietnamese - I don't know the language so I can't remember what its called in Vietnam. My mother made 'congee' every winter. A massive pot of it. I looked at the receipe above and its made totally differently. I just made a pot (its cold here). I was looking it up to try to find out its Vietnamese name. I believe that most asian cultures have a variation of 'congee'. The Vietnamese congee is very plain BUT cooked correctly it remembers me of my mum!

Is congee chinese or vietnamese? I always thought congee was a traditional viet recipe. Other South east asian nations do have their own versions>
