Cuban rice and beans recipe (congri)

Ingredients

1 cup of black beans
2 litres of water
1 onion, chopped
2 garlic cloves, mashed
2 tablespoons of tomato paste
Half a cup of vegetable oil
2 tablespoons salt
5 cups long grain rice

Preparation

Wash and soak beans for about an hour in two litres of water. Cook in the same water for a further hour, leaving the beans slightly underdone.

Fry the onion and garlic in the vegetable oil till transparent, then add tomato paste. Add five cups of water from the bean saucepan, the beans and the rice. Cook, covered, for a further twenty minutes or until the rice and beans are ready and the liquid absorbed.

Does your reference to 5 cups of rice mean already cooked or uncooked. As I discovered 5 cupsd of uncooked rice produces an overwhelming amount of cooked rice. Bill

Cuban Rice and Beans (Congri)
This is very delicious! I can vouch for this as I have just been to Cuba and rice and beans in one form or another is served a lot...and can accompany almost anything!! In the restaurants (and homes) where we ate rice and black beans (as opposed to red beans) it was called 'Mores y Christianes'....'Moors and Christians'..for obvious reasons...and I enjoyed ordering 'Mores y Christianes ' specifically by name!

Rescuing burnt chocolate
