Chocolate walnut fudge recipe

Ingredients

2 cups castor sugar
1 1/3 cups sour cream
¼ cup glucose syrup
400g dark chocolate, chopped
2 x 100g packets white marshmallows, chopped
1 cup chopped walnuts

Preparation

Grease 20cm x 30cm lamington pan, line base and sides with baking paper; grease paper.

Combine sugar, cream and glucose in a heavy-based pan. Stir over heat, without boiling, until sugar is dissolved.

Bring to boil. Boil uncovered without stirring until mixture reaches a temperature of 116°C on a thermometer.

Remove pan from heat. Quickly stir in chocolate and marshmallows, stir until melted.

Stir in walnuts.

Spread mix evenly into prepared pan, refrigerate until firm. Cut into squares.
