Basic biscuit base recipe

From this one recipe you can make at least six or more different flavours of biscuits!

Ingredients

125g margarine or butter
1 cup of white sugar
2 eggs
2 cups of self-raising flour
small amount of margarine or cooking spray to prepare baking trays

Preparation

Preheat oven to 180°C.

Place sugar and margarine or butter in a medium-sized bowl and beat until the mix is creamed.

Add one egg at a time, mixing in thoroughly.

Add flour, a little at a time, until all is blended. This should be quite firm when done. Do not add water or milk.

Dip your clean, dry hands into the mixture, picking up approximately 1 teaspoon of the mixture. Roll into ball shapes and place on baking tray until tray is full. Leave space between each ball as they spread when cooking.

Using a finger dipped in flour, push a hole into each biscuit and then place some jam (plum or strawberry is best) into the hole.

Place in oven for 15 minutes or until golden light brown.

Remove from the oven and remove from tray using an egg lifter or spatula. Place them on a rack to cool. The finished biscuit should be crunchy once cooled.

Make other flavours by adding choc chips to the mix; spice and mixed dry fruit or sultanas; cocoa powder for chocolate biscuits. You can roll finished biscuits in coconut and then flatten with a fork dipped in flour. Make almond centres by simply pushing a whole almond into the middle.

These biscuits don't freeze but will keep well in an airtight container.

Hot Tips

Chopping an onion

Cut the onion it in half across the base (leaving a portion of root on each half - this will help keep the onion together while slicing), peel the onion and place cut side down. Make multiple cuts long ways from top to bottom but not through the root at the end. The more cuts, the finer the dice.
