Lemon chicken recipe

Quick and easy. It takes seven minutes from start to finish.

Ingredients

2 small chicken breasts or 1 large
1 tablespoon plain flour
juice of 1 lemon
1 dessertspoon butter
1 glass white wine
parsley, to taste
black pepper, to taste

Preparation

Slice chicken breasts into 3-4cm strips and coat with plain flour.

Melt butter in heavy saucepan. Place chicken pieces in pan and cook on moderate heat until slightly coloured. Remove chicken pieces from pan and put to side.

Add wine to pan along with lemon juice and simmer for 90 seconds.

Return chicken to pan and cook for about 5 minutes on low heat. Turn off and add chopped parsley and add freshly ground black pepper

Serve with boiled chad potatoes, honey carrots and sliced zucchini. If including zucchini, a small amount of tarragon will do wonders to this dish.
