Stuffed chicken thighs recipe

A quick and easy meal that can be prepared in advance and then cooked just before you need it.

Ingredients

4 chicken thigh fillets
2 chargrilled capsicum, cut in half
4 slices swiss cheese
large handful of baby spinach leaves
4 slices shaved ham
premade basil pesto with parmesan and cashews

Preparation

Preheat oven to 180°C.

Trim away any excess fat from chicken fillets.

Lay fillets flat and spread with a little pesto.

Layer the capsicum, cheese, spinach and ham on one side of the fillets.

Fold fillets in half and hold together with toothpicks.

Place in ovenproof dish and bake for 40 minutes.

Serve with salad.
