Quick, easy and very tasty chicken dish.
Ingredients
2 chicken fillets2 bacon rashes, chopped
4 spring onions, chopped
1 garlic clove, chopped
butter or margarine
2 slices day old bread, crumbled
2 tablespoons of parmesan cheese
chopped basil and parsley
Preparation
Melt butter in a pyrex dish with garlic.Place chicken fillets on top.
Mix all other ingredients together and sprinkle over chicken.
Cook in oven at 180°C for 20 minutes.

Making a cartouche
A cartouche is a circle of baking paper placed on top of a dish to prevent it forming a skin or drying out. To make a cartouche take a square of baking paper slightly larger than your pan, fold in half and in half again, keep folding the same way so that one corner remains the centre point of the paper. When you have folded it over a few times cut off the edge to form a circle.
