Tuna fried rice recipe

This easy, quick meal is packed with goodness.

Ingredients

1 x 200g can tuna in oil, drained
2 carrots, grated
½ cup peas
1 onion, thinly sliced
2 cups cooked rice
1 garlic clove, crushed
1 tablespoon oyster sauce
1 tablespoon xo sauce (available in Asian grocery stores)
1 tablespoon kecap manis (Indonesian thick soy sauce)
salt and pepper, to taste
1 cucumber, thinly sliced
1 teaspoon fried shallot (available in Asian grocery stores)
1 spring onion, thinly sliced

Preparation

Heat the frying pan or wok, put in a little bit of vegetable oil and fry onion and garlic until fragrant.

Add tuna, carrots and peas cook for about 2 minutes.

Add cooked rice, mix well with tuna, carrots and peas.

Add sauces, mix all together and add cut salt and pepper. Cook for 2 minutes. Remove from wok, garnish with sliced spring onion, cucumber and fried shallots.
