Fried rice recipe

Ingredients

2 tablespoons peanut oil
2 eggs, lightly beaten
2 carrots, finely diced
3 garlic cloves, crushed
1 cup (120g) frozen peas
8 green onions (shallots), finely sliced
¼ cup (60ml) soy sauce
1 tablespoon fish sauce
4 cups cold cooked rice
½ cup chopped coriander leaves

Preparation

Heat 2 teaspoons of oil in a wok on high. Add eggs and swirl to coat sides of wok. Cook for 30 seconds, until egg sets. Slide omelette onto a board, roll up and slice thinly. Set aside.

Heat remaining oil in wok on high. Add carrot and stir-fry for 2 minutes. Add garlic, peas and half of green onion and stir-fry for 1 minute.

Add combined soy and fish sauces and simmer for 1 minute. Stir through rice and toss for 1 minute, until combined and rice is heated through. Add omelette, coriander and remaining green onion. Toss to combine and serve.
