Spaghettini with prawns, rocket and chilli recipe

Ingredients

375g spaghettini
¼ cup (60ml) olive oil
500g green prawns, peeled, deveined, tails intact
1 small fresh red chilli, seeded, finely sliced
2 garlic cloves, crushed
150g rocket, trimmed
lemon wedges, crusty bread, to serve

Preparation

Cook spaghettini in a large saucepan of boiling, salted water according to packet directions. Drain.

Meanwhile, heat olive oil in a large frying pan on high. Sauté prawns for 3 minutes, until opaque. Add chilli and garlic and cook for 1 minute, taking care not to let garlic burn.

Return pasta to saucepan with prawns, chilli and garlic. Add rocket and toss to combine on medium heat for 1 minute, to wilt slightly. Serve with lemon wedges and crusty bread.
