Caipirinha recipe

Ingredients

1 lime
2 ounces of cachaça (Brazilian cane spirit)*
Sugar to taste
Crushed ice

Preparation

Wash the lime and roll it on a cooking board to loosen the juices. Cut the lime into pieces and place them in a glass. Sprinkle with the sugar and crush the pieces (pulp side up) with a pestle.

Add the cachaça and stir to mix. Add the ice and stir again. Drain and pour into a glass.
Enjoy!... Saúde! (in portuguese)

If you're struggling to find or afford cachaca, you can instead just use vodka (much easier on the tastebuds also) - called a "caipiroska" in Brazil/South America... still quite authentic!

I have found Pitu for sale in Melbourne for about $60 a bottle. When I was in Brazil last I could get a 1L bottle at the supermarket for about 3 Brazilian Real, about $1.80 AUD!!!!!! Surely the difference can't all be tax??

Where to get Cachaca
Dan Murphy's has the brand "51", which is what they made most of the caipirinhas from in Brazil, when I was there. Definitely worth trying to find it.

You can also substitute the Cachaca with WHITE rum. We use the "Kimberley Canfire White Rum"

Hmm, characters are weird on that last post
The words with strange characters are cachaca and Pitu (spelled using only English letters). The Pitu you will notice right away as it has a black label with a bright red lobster on it. The 51 brand has a yellow and red label with a giant 51 on it. :)

I don't think I've seen it in any bottle shops in Canberra. You might be able to buy a bottle from one of the cocktail bars like Hippo and if that's not possible/allowed, maybe ask who their supplier is (I think they get it delivered from Sydney as with most other specialty liqueurs and spirits).
