Ricotta pasta recipe

This is an Olympic Village School Garden recipe.

Ingredients

500 g packet of pasta shapes (penne or similar)
1 300 ml tub of ricotta cheese
1 bunch of parsley, chopped finely
Grated parmesan cheese
Salt and pepper

Preparation

Cook the pasta in boiling salted water until it’s cooked (the cooking time is on the packet but you can check by tasting it and making sure it’s not too hard to bite).
When it’s ready, drain it in a colander over the saucepan so that you keep the cooking water.

Put the ricotta in a separate bowl.

Take ½ cup of the cooking water and add to the ricotta and mix together. Tip the rest of the cooking water out and put the drained pasta back into the saucepan.

Put the ricotta on the pasta and mix. Sprinkle over the parsley and the parmesan cheese and a bit of extra salt and pepper if you need it.
