Flourless mandarin, almond and chocolate cake recipe

Ingredients

8 mandarins
500g almond meal
12 eggs
500g caster sugar
1 tablespoon baking powder
1 cup dark couverture (cooking) chocolate, chopped

Candied peel:
1 cup sugar
1 cup water
½ cup orange peel, chopped

Preparation

Place mandarins in a heavy based saucepan, cover well with water and bring to the boil. Boil for about 2 hours, drain and set aside to cool.

Grease and line 28cm cake tin. Set oven to 180°C.

Chop and seed mandarins and place in food processor. Transfer to another large bowl and add eggs, sugar and baking powder. Fold in almond meal and chocolate.

Bake for approximately 1 hour or until firm to touch.

To make candied peel, bring sugar and water to the boil. Boil for 5 minutes and add orange peel. Boil for a further 20 minutes. Pour over warm cake and serve with double cream.

Preparing a new Tajine

To prepare a new tajine before cooking; soak overnight in water (the bathtub is a good place). Then fill with water, add same salt and a few bay leaves and a few cardamom pods. Heat over a low gas flame, until boiling to infuse the herbs into the porous terracotta. If your tajine is used regularly this won't need to be redone. Tajines can be used on the barbecue, charcoal or low gas flame but are not recommended for electric cook tops or in the oven.

Glossary

Nori

Believed to be made from seaweed, nori is actually made from dried algae. It is primarily used to wrap sushi, to garnish and to flavour noodle soups. The darker the colour and greater the aroma, the higher the quality.
