Spiced spaghetti recipe

A delicious and easy way to get the kids to eat vegies.

Ingredients

500g beef mince
1 large carrot, diced
1 red capsicum, diced
1 large onion, diced
1 red apple, diced
1 cup peas
1 large tin tomato soup
2 teaspoons curry powder
1 teaspoon seeded mustard
250g cooked pasta of your choice

Preparation

Brown mince and onion, then add the capsicum, carrot, apple and peas. Fry for a minute or 2.

Add the soup and fill the tin half way up with water.

Add the curry powder and mustard. Cover and cook on a low heat until the carrots are tender (around 20 minutes). Add more water if needed.

Stir through the cooked pasta and serve. A sprinkle of parmesan cheese on top is nice.

Serve with crusty bread and salad.

Smoking with paperbark (native Aust)

You can use Australian native paperbark in place of baking paper when cooking en papillotte. Simply fold the paperbark around a fillet of fish (including any other herbs and spices) and fold the open ends inwards. Secure with string (as you would tie a birthday present) and cook on the barbecue. Paperbark is not edible.

Glossary

Za'atar

Za'atar is a mix of thyme, roasted sesame seeds, sumac and salt. Mix Za'atar with a little olive oil and serve as a dip or spread on flat bread.
