Braised lotus with pork rib soup recipe

Ingredients

500g pork ribs
700g fresh lotus root, cut into cubes 10 cm in length*
2 carrots, sliced
10g ginger, sliced
2 dried red Chinese dates
2 ½ litres of boiling water

Preparation

To prepare fresh lotus, wash and peel with a potato peeler.

Bring a pot of water to the boil and add pork ribs, fresh lotus root, carrots, ginger and dates.

Keep boiling on high heat for two hours, covered, until lotus root is tender.

Salt to taste.
