A wonderful slice — great hot or cold.

Ingredients

2 x 375g zucchini, grated
5 eggs
1 large onion, finely chopped
3 rashers bacon
1 cup grated cheese
1 cup self-raising flour
½ cup oil
salt and pepper, to taste

Preparation

Preheat oven to 180°C.

Coarsley grate unpeeled zucchini with hand grater.

Finely chop onion and cook with bacon for a few minutes in the microwave.

Combine all ingredients and pour into well-greased lamington tin (26 x 16 cm) or muffin pan. Bake in oven for 30-40 minutes or until it comes clean when inserted with a skewer. Serve hot or cold.
