Cauliflower, cashew and green pea curry recipe

Ingredients

1 cup cashews
3 cups water
1 cauliflower, florets only
¼ teaspoon ground turmeric
¼ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon salt
½ cup fresh or frozen green peas
½ cup thick coconut milk
2 tablespoons oil
1 onion, chopped
5 curry leaves
1 pandanus leaf
¼ teaspoon mustard seeds
1 clove garlic, crushed
1 large green chilli
½ teaspoon dried chilli flakes
1 tablespoon lemon juice

Preparation

Boil cashews in a large pan in the water until they are tender (about 20 mins). Add cauliflower to the cashews and cook for another 5 minutes.

Sprinkle over the turmeric, cumin, coriander and salt. Add peas and coconut milk and bring back to a simmer.

In a skillet, heat oil over medium heat.

Add onion, pandanus leaf, curry leaves, mustard seeds, garlic and chillies and sauté until golden. Add to the cauliflower curry.

Finish with lemon juice and serve with roti or plain bread.

the bad ratings are unfounded
I am a chef. I used this recipe as a guide to create a fantastic dish. I often find that average cooks think they have to follow a recipe exactly. Recipes are ALWAYS flexible and just a guide. Use the ingredients you have on hand, improvise, fix what you don't like. I toasted the cashews rather than boil, used more corriander, used a can of chopped chillis, a little more garlic and toasted mustard seeds in ghee. I didn't use the pandanus, and added more lemon to taste. Incredible! A good guide.

watch the video and you will see that he uses sweet paprika, lemongrass and coconut cream not milk also, how many people does it serve?
