Perfect roast potatoes recipe

Ingredients

15 potatoes, such as sebago, peeled, halved (see cooking tip)
1/3 cup (80ml) rice bran or light olive oil

Preparation

Preheat oven to 210°C or 190°C fan. Place potato in a saucepan, cover with cold water, add a good pinch of salt and bring to boil on medium-high heat. Boil for 5 minutes.

Drain, return to saucepan and heat on low for 1-2 minutes, shaking pan, until dry.

Lightly scratch all over with a fork (above), for extra crisp and crusty potatoes. Place in a heavy baking dish with oil and 1 teaspoon salt. If you like, add your choice of flavourings (see right). Toss to coat. Bake for 40-50 minutes, turning occasionally, until golden and crusty. Skewer each potato as you place in a serving dish to release steam and prevent sogginess. Serve as soon as possible.

Roast potato variations

  1. For Mediterranean roast potatoes, add unpeeled whole garlic cloves, a handful of black olives and strips of red capsicum before cooking.

  2. For herbed roast potatoes, toss in sprigs of rosemary and thyme before cooking.

  3. For onion-flavoured roast potatoes, toss through red onion and lemon wedges before cooking.
