Falafel recipe

Ingredients

1 cup dried split fava beans, soaked overnight
1 cup dried chickpeas, soaked overnight
1 small onion, finely chopped
1/3 cup flat-leaf parsley, minced
1/2 bunch fresh coriander
4 garlic clove, minced
1 teaspoon salt
1 tsp Lebanese 7 spice powder. –cloves, cumin, cinnamon, all spice (pimento), black pepper, white pepper, nutmeg
3 tablespoons water
Pure olive oil or canola oil, for frying

Preparation

Drain and rinse the favas and chickpeas and put them in a food processor.

Add the onion, parsley, coriander, garlic, baking powder, salt, cumin and crushed red pepper. Pulse, scraping down the side of the bowl, to form a coarse paste.

Add the water and process until the mixture is gritty but fine and brilliant green.

Scrape the paste into a bowl.

In a medium saucepan, heat 5 cm of oil to 350 degrees.

Scoop rounded tablespoons of the falafel mixture into the hot oil and fry in small batches until browned and crisp, about two minutes.

Drain on paper towels set over a wire rack and serve hot, with tahina mixed with yoghurt and a little paprika.

RE: missing ingredients
Hi, I read a similar recipe on the web (wording almost the same!) where the missing ingredients of red pepper (paprika) and baking powder are mentioned. It should give you an indication of how much you should use: http://www.zawaj.com/recipes/appetizers/falafel.html

Perfect!
I just made these for dinner and they came out great with a real authentic flavour. I know that the list of ingredients and the method don't match up but if you just put all the ingredients, apart from the water and oil, in a food processor and pulse until if forms a thick paste then add the water and continue, they will come out perfect. I was also wondering, is there an alternative way of cooking them apart from frying? They're so yummy but not so good for the waistline. Thanks

why its melts in the pan
if the mixture has melted and come apart when you put it in the pan, its most probably because you have used cooked peas and beans... they need to be raw (as mentioned above - dried) hope that helps

Help!
I was inspired to try this recipe, and followed the instructions. When the little falafels hit the hot oil they melted into a green sludge! what am i doing wrong???

I don't understand
This recipe makes no sense - the ingredients don't match up with the instructions. Eg the instructions refer to cumin, baking powder and crushed red peppers, which aren't in the ingredients, and the ingredients refer to 7 spice powder, which isn't in the instructions. Can this please be clarified? Or can anyone else assist? I assume the spices are supposed to refer to each other, but how much (if any) baking powder do you need?

i have made this recipe twice and keep having a problem with the falafel sticking together when it hits the deep fryer. the only way they stick together is if i add flour. can anyone help me????/??
