Pan-fried chicken with cherry tomatoes recipe

Ingredients

4 chicken breast fillets
2 tablespoons olive oil
2 garlic cloves, finely chopped
½ cup (60g) pitted black olives, halved
1 punnet (250g) cherry tomatoes, halved
green salad and crusty bread, to serve

Preparation

Pat chicken dry with paper towel. Heat 1 tablespoon of oil in a large frying pan on medium. Pan-fry chicken, turning once, for 1-2 minutes until golden on both sides. Remove and set aside.

Heat remaining oil on low. Cook garlic until aromatic but not coloured. Return chicken to pan with olives and half of tomatoes. Season well with pepper. Simmer for 10 minutes, until chicken is cooked through. Add remaining tomatoes and cook for another 3 minutes.

Arrange chicken on plates. Spoon over sauce. Serve with salad and crusty bread.

Super easy but tasty dish. Great if you are in a rush. I tweaked with some extra garlic and added rocket, spinach & Italian parsley at the end.
