Spicy roasted zucchini recipe

Ingredients

4 zucchini, thickly sliced
1 tablespoon olive oil
2 garlic cloves, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
natural yogurt, to serve
coriander leaves

Preparation

Preheat oven to 200°C or 180°C fan.

In a roasting pan, combine zucchini, olive oil, garlic, cumin and coriander. Season to taste. Roast for 10-15 minutes, tossing halfway through cooking, until tender and starting to colour.

Remove and stir through coriander leaves. Serve with natural yogurt.
