Linguine with zucchini and lemon recipe

Ingredients

300g linguine
1/3 cup (80ml) olive oil
3 green onions (shallots), thinly sliced
3 zucchini, thinly sliced
1 garlic clove, crushed
grated rind and juice of 1 lemon
1 punnet (250g) cherry tomatoes, halved
parmesan shavings, to serve

Preparation

Cook linguine in a large saucepan of boiling, salted water according to packet directions. Drain, return to saucepan. Cover and keep warm.

Meanwhile, heat half of oil in a large frying pan on high. Panfry green onion
and zucchini for 5 minutes, until soft and golden. Add garlic and cook for another minute.

Stir in lemon rind and juice, tomatoes and remaining oil. Season to taste. Add to pasta and toss for 1 minute on high. Serve scattered with parmesan.
