Pork cutlets with zucchini and potato mash recipe

Ingredients

4 pork cutlets
½ teaspoon cracked black pepper
3 large potatoes, peeled and quartered
4 zucchini, chopped
cooking oil spray
2 garlic cloves, crushed
¼ cup (60ml) hot milk

Preparation

Season pork cutlets with cracked black pepper and set aside. Place potatoes in a saucepan with enough salted water to cover. Bring to boil. Cook for 12-15 minutes, until tender. Add zucchini for last 5 minutes. Drain.

Meanwhile, spray pork cutlets with oil. Heat a large frying pan on high. Cook pork cutlets for 4 minutes each side, until tender.

Mash vegetables in a heated bowl. Beat in garlic and milk. Season to taste.
Serve with pork cutlets.
