Cheese rice soufflé recipe

This is a family recipe which I have handed down to my daughters. Don't be put off by the fact it's a soufflé. It's very easy to make. Great as a side dish with steak, chops and chicken.

Ingredients

1 cup cooked white rice
2 tablespoons melted butter
4 eggs
½ cup milk
1 cup tasty cheese, grated
3 tablespoons parmesan cheese, grated
freshly ground rock salt and black pepper, to taste

Preparation

Preheat oven to hot.

Beat eggs in a large bowl, add milk and rice and mix well. Add tasty cheese, salt and pepper, to taste and mix again.

Spoon mixture into a greased small 4-cup baking or casserole dish and pour melted butter over top; sprinkle with parmesan cheese.

Bake in a hot oven for 10 minutes, then medium oven for 20 minutes or until set and golden brown. Serve cut into squares.

Re-hydrating dried mushrooms
