Ingredients

1 1/3 cups (200g) self-raising flour
1/3 cup (75g) demerara sugar
1 egg, lightly beaten
½ cup (125ml) rice bran oil
1/3 cup (80ml) milk
1½ cups fruit mince

Preparation

Preheat oven to 200°C or 180°C fan. Place mini paper patty cases into
four 12-hole mini muffin pans.

Sift flour into a bowl and mix in sugar. In a small bowl, combine egg, oil, milk and fruit mince. Fold into dry ingredients.

Spoon just under a tablespoon of mixture into each patty case and bake
for 15 minutes, until well risen and golden. Serve warm or at room temperature. Makes about 42.
